I am back with another family staple. A few weeks ago we ran out of our last jar of nut butter and my mom kept forgetting to buy some at the store. I could not go another day without my apples and nut butter so I had to take matters into my own hands đđ»ââ
Luckily we always have a staple of nuts around that we roast ourselves. After testing a few different proportions of nuts, I think I've perfected the blend. This is so good with apples of course, but we've been eating it on toast, swirling it into some oatmeal, and most recently I baked it into cookies. Versatile, creamy sweet, and au naturale - you've just gotta try it !
Ingredients
⣠1/3 cup roasted peanuts
⣠1/3 cup roasted cashews
⣠1/3 cup roasted pecans
⣠1/3 cup roasted walnuts
⣠2/3 cup roasted almonds
*roasting is optional - but it really brings out the natural sweetness of each of the nuts*
Dump all the nuts into a high speed blender*
Start blending at the lowest setting, and take time to scrape the edges. It will look rough chopped and you might feel it necessary to add oil but don't! The nuts naturally have a lot of oil. Let it sit 5 minutes and begin blending again. I guarantee it will start blending better.
Begin increasing blender speed
The fastest setting I used was a little less than half the maximum and it was enough to blend the nuts down. Depending on if you like chunky or smooth butter, you can alter your blending time.
