apple crisp 🥧

As the autumn breeze begins to send summer home for the year, I find myself craving the pies of fall. 🍂 I don't always have the time to make a pie crust nor do I have the patience to wait 5 hours to freshly bake a pie, so I came up with this easy and fast to make recipe that makes me feel like I'm eating a real apple pie! It's healthy(er), easily customizable and you probably have all these ingredients in your house. Enjoy!


Ingredients

‣ 1 apple 🍏 (any kind! I like honeycrisp)

‣ 2 tsp cinnamon

‣ 1/4 tsp ginger powder

‣ 1/4 tsp nutmeg

‣ zest of 1 lemon

‣ 1 TBS of fresh lemon juice

‣ 1 tsp vanilla extract

‣ 2-3 TBS coconut sugar (any sugar will work)

‣ 1/3 cup pecans (any nut(s) you like)

‣ 1/4 cup rolled oats

‣ 2 TBS coconut oil




Peel and cut apples 🍎

After you peel the apples, cut the apples into quarters and remove the cores by making an inverted triangle (2 cuts) and pop them out. Then slice the apples to the thickness of about a quarter.





Prep the lemon 🍋

After you wash the lemon, zest the skin of the lemon and then cut it in half to juice it.


Be sure to only get the yellow stuff, the white underneath is the pith and is quite bitter.





Flavor the apples 🍏

Place your sliced apples into an oven safe bowl OR aluminum foil (for those who share my inner laziness). Add cinnamon, ginger, nutmeg, vanilla, lemon juice, and lemon zest to the apples and mix.


*if you are using aluminum, fold up the edges to make a boat to hold your apples*


Pecan streusel topping 🥜

Break the nuts* into a size you fancy, and combine with rolled oats, coconut sugar, and coconut oil. Then pour over the apples.



Bake & shake

Turn on your oven to 375F** and place your apple crisp into the oven. YES before it finishes preheating. Once the oven reaches 375F, set a timer for 10 minutes. It should look brown and crispy when it finishes baking.


If you want to indulge, plop a few dollops of butter on top before you bake.


Indulge

Once it comes out of the oven, you can eat it as is or top with some vanilla ice cream. This is SO tasty and so simple to whip together anytime I want something sweet to eat.


Tips:

*always use raw nuts, if already roasted they might burn

*every oven is different, I use a toaster oven so the heat may be a bit more concentrated than a large oven. You may need to play around with temperatures to find the perfect one for your oven.

*depending on your sweet tooth you may need to add sugar to the apples or. more to the topping, that is up to you.
